Greens 1/2 lb. smoked meat (ham hocks, small turkey wings or small neck bones) 1 tablespoon house seasonsings 1 tablespoon hot sauce 1 large bunch collards (or other green) 1 stick butter HOUSE SEASONING 1 cup salt 1/4 cup black pepper 1/4 cup garlic powder Store tightly. In large pot bring 3 quarts water to boil. Add meat, house seasoning, salt & hot sauce. Reduce heat to medium & cook for 1 hour. Wash green real good (remove thick stem.) Stack 6-8 stripped leaves on top of each other - roll up & slice into 1/2 to 1 inch thick slices. Put greens in pot w/meat. Add butter after greens - cook for 45 to 60 minutes. Taste & adjust seasoning.
